A jamon iberico de bellota develops slowly. In the darkness of the bodega, salt, air and time work through the meat. The flavours deepen, the fat softens and each part of the ham develops its own character.

When the ham is opened, all of this becomes visible: the deep-red meat, the fine marbling of the fat and an aroma that changes from the first slice to the last.

El ritual

A quiet ceremony
in the room.

A cortador needs no stage. The steady movement of the knife, the ham slowly opening and the plates filling draw the guests closer. The carving station becomes a place to gather — and to return to throughout the evening.

Hand carving follows the shape of the ham, not a machine’s measurements. Thin slices carry both meat and fat in the right balance. As they leave the knife, they are glossy, soft and almost translucent — ready to melt on the tongue.
