Start with the event format
At a reception with other food, 40–45 grams of carved meat per guest is a practical planning amount. A whole jamon iberico de bellota weighs 8–9 kg and yields about 4–4.5 kg of carved meat. That serves about 80 guests.
If jamon is the main feature of the evening, the portion needs to be larger. One whole ham then usually serves 35–40 people. Guest count must therefore be considered together with the format, duration and other food being served.
50, 80 or 100 guests
| Guests | 40 g per person | 45 g per person | Planning |
|---|---|---|---|
| 50 | 2.0 kg | 2.25 kg | One whole ham provides a good margin. |
| 80 | 3.2 kg | 3.6 kg | One whole ham is a natural plan. |
| 100 | 4.0 kg | 4.5 kg | The normal full yield is used. The format needs confirmation. |
The amounts refer to carved meat. Bone, rind and outer fat are part of the total ham weight but not the portion amount.
When one ham is enough for 100
For 100 guests, one whole ham can be enough if jamon is a controlled part of a reception, other food is available and the serving is spread through the event. There is little margin, however. Guest flow, event length and the actual yield of the ham become important.
If jamon is to be served generously, remain available through a long evening or form a central part of the food, I prefer to plan with more margin rather than promise that one ham will be enough.
What I need to know
- Approximate number of guests.
- Whether jamon is part of the reception or the main feature.
- What else is being served before, during and after.
- When guests arrive and how long the service should remain available.
- Whether the venue or caterer has a contact person for placement and timing.
I bring the whole ham, stand, knives and everything needed for the carving. With one contact person, I can coordinate the practical details directly with the venue or caterer.
Common questions
How much jamon should I allow per person at a reception?
Allow 40–45 grams of carved meat per guest when jamon is one part of a reception with other food.
How many guests does one whole jamon iberico serve?
A whole 8–9 kg jamon iberico de bellota yields about 4–4.5 kg of carved meat. That serves about 80 reception guests at a planned portion of 40–45 grams.
Is one ham enough for 100 guests?
For 100 guests, the requirement is 4–4.5 kg when jamon is served as a controlled reception portion. That uses the normal full yield of one ham, so the format, other food and guest flow need to be planned carefully.
How many people does it serve if jamon is the main feature?
When jamon has a larger role in the serving, one whole ham usually serves 35–40 people.
